Egg In A Hole: An Addictive Breakfast Fix For Spring.

One random weekend when I was away from Cairo, my girlfriends and I stocked up on loads of goodies from the supermarket and made up recipes while there, anticipating what we would cook for breakfast, lunch and dinner! And oh did we come up with cool creations, some of which we discovered later on are actual recipes! Made us feel like we’re important, of course.

We treated ourselves every morning to this invention for breakfast, and she kept us on our feet till lunch time. Not only is this recipe fun to do, but it’s delicious and you can add so many things to it and play around, and it would still taste good. Given that Spring is kicking in, an egg in a hole for brunch or on a sunny Friday will definitely add a nice start to your day!

The result of having this for breakfast for three days left one of my friends dreaming about it for weeks on end, so I’d like to know how you would feel after you try it too! It really is addictive!

Here’s the recipe.

RECIPE: (serves 2)

-2 Eggs

-2 Pieces of toast

-Knob of butter

-1 Tomato sliced

-2 Slices of your favorite cheese

-Salt & Pepper

Tip : For a brunch version, add Marinara sauce on top of it, after you serve!

METHOD:

  • In a pan, melt the knob of butter.
  • With a glass, make a hole in the piece of toast and put aside.
  • Place the toast in the pan and break the egg in the middle. Add salt & pepper.
  • Cook for 5 minutes till all the egg has formed evenly inside the hole and turn the other side so the yolk is well cooked.
  • Turn back to the original side and add the tomato slice & cheese, so it melts.
  • Leave for 2 minutes and remove from pan onto plate.
  • After finishing both pieces put the circled pieces you cut in the butter to toast them, and add onto the toast that is cooked, on the plate.
