He’s doing so through many creative methods, including hosting a TV show called “Cocina con Causa” (Cooking with a Cause), where he teaches viewers how to cook food leftovers to make tasty dishes.

Nikkei cuisine emerged when Japanese emigrants, who had lost their jobs in Japan, started working on Peru’s coastal plantations during the Industrial Revolution.
That is how the two cultures came together, leading to some interesting fusion dishes, including the acevichado roll, which features avocado and tempura shrimp on the inside, topped with tuna and acevichado sauce.
