Recipe: Konafa and Raspberry Sorbet Sandwiches
We have all been seeing many interesting Ramadan desserts this year. They were new and exciting at first before the Red Velvet Konafa became the symbol of wanna-be-ism (if there is such a phrase), and the Mango Konafa became blukh.
The point is that these things caught our attention when they were new and when they made our taste buds dance. There is something to be said for changing and creating and innovating. And what better place than at home, the easiest place to mix and match things and create awesomeness for your taste buds.
I am no chef. I only have the sense of adventure to mix and match flavours together. Sometimes they turn out to be catastrophic disasters, but other times, they are just pure heaven.
This innovative recipe is one of the super outcomes of my cooking adventures. Once again, I’m not a chef, so I don’t really know amounts or measurements. It’s all a matter of sense!
Ingredients:
Konafa:
– Konafa dough
– Sunflower seed 0il
– Honey
Raspberry Sorbet:
– Frozen raspberry puree (from Gourmet)
– Yogurt
– Lemon squeeze
Steps:
1. Put the konafa dough in the freezer until it becomes hard.
2. Once it’s hard, take it out of the freezer, and use your hands to cut it into small pieces.
3. Mix with oil until it’s all blended together well
4. In a cupcake tray, take your konafa/oil mix and put it in the spaces. Squeeze it against the pan, pushing it tight together. Keep pushing the dough with your fingers until it’s all squeezed into the spaces.
5. Put it in the oven until it looks crunchy and golden. Once they’re out of the oven, put some honey on them while still hot, to sweeten the konafa.
6. Get the raspberry puree. Take about half the box out and put it in a big bowl.
7. Put three cups of yogurt and squeeze one lemon on the mix, and mix well with a spoon until it’s all well blended.
8. Put it in the freezer again.
9. Once you have the konafa ready, let it settle. Put one of your konafas on a tray, and add some of your delicious raspberry sorbet. You can serve it with roasted pistachios!
