The quarantine has turned us all into hard-core food enthusiasts. Yes, we all vowed to use this extra time that we currently have in isolation to do the things we didn’t have the time to do before; to practice our favorite hobbies, do yoga, workout every morning in your room… But this only happened for the first week of the quarantine, because let’s be real, at the end of the day what else are we supposed to do? Netflix and eat in bed of course.

Below you’ll find some of our favorite food bloggers and chefs from around the Middle East to help you get you extra creative and show you what to cook! From Morrocan to Jordanian cuisine, here are some mouthwatering recipes to get you through quarantine.

🍴zucchini fritter pancake with an egg on top sprinkled with Aleppo pepper 🍴 remember those zucchini fritters that we turned into pancakes … and then put an egg on too sunny side up … and then sprinkled Aleppo pepper ? Well, they were so good. To be honest the zucchini fritter pancake is so good on its own you can skip the topping part or not. Either way they’re amazing. Zucchini fritters and called “ijjay” in Arabic and they are surprisingly so easy to make (is it a duel sow that I’m saying they’re easy! I’m constantly amazed at how easy cooking is) but seriously they’re just shredding veggies adding eggs and baking powder and voila. Usually they’re not this thin but If you go the blog well show you how to make them super thin like a crepe or pancake. So good . Happy Sunday. Happy Easter. Happy quarantining. An all rounder snack to take you from 11am coffee time to that pre-workout pick-me-up 😍 Absolutely love the crunch of these little flapjack bites – Not too crumbly either. INGREDIENTS 3 ripe bananas 200g oats 50g dried blueberries/raisins/chopped apricots 40g pumpkin seeds 40g sunflower seeds 3 tablespoons of peanut butter/almond butter/OR tahini 1 tablespoon of melted butter or coconut oil 2 TBSP (approx 30g) maple syrup or honey 1 teaspoon cinnamon 30g of dark chocolate 1️⃣Preheat the oven to 180ºC. Grease and Line a square baking tray with baking parchment. 2️⃣In a mixing bowl, mash the bananas with a fork. Add the oats, dried fruit, and seeds. Stir well. 3️⃣Add the melted coconut oil or butter to a bowl with the peanut butter, maple syrup, and cinnamon. Mix thoroughly. 4️⃣Pour the melted spread mixture over the banana and oats, stir to combine. 5️⃣Transfer the mixture into the lined baking tray and spread to an even thickness. Bake in the oven for 35–40 minutes until cooked through and golden brown. 6️⃣Carefully turn out onto a cooling rack and allow to cool. 7️⃣Before slicing, melt the dark chocolate and drizzle on top. Pop in the fridge for 20 mins. 8️⃣Slice in 16 squares. Can be stored in a sealed container for 4-5 days or can freeze for up to 3 months.

Need some inspiration for breakfast? How about baking some Kaek bil simsim or Jerusalem bagels to enjoy over the weekend? (I know at this point, we've all lost track of days, space and time but hey that's more of an excuse to use the time to try something new or bake an old favorite 😉) . Ka3ek bel semsem or Jerusalem bagels are a traditional bread popular in the old city of Jerusalem and throughout the Levant (Palestine, Jordan, Syria, Lebanon). Many start their day buying one of these from bakeries or carts selling them in the street. If you pass through any of the old streets of Amman  in the early morning, you are bound to hear ” toasty toasty ka’aek” being called out from an old man driving his cart, greeting you with a smile and a wish for a wonderful morning. If you stop by, you can buy this sesame bread plain or as a sandwich filled with cheese, zaatar, falafel or oven baked eggs. Sweet potato pie to die for 🥧 . . . Sweet potato 500 g ( 2 cups mashed) Eggs 2 Sugar 1 cup Softened butter ½ cup Cinnamon 1 tsp Vanilla 1 tsp Evaporated milk ¼ cup . Pie crust: Butter ½ cup diced and chilled Flour 1 ¼ cup Salt ¼ tsp Ice water ¼ cup Method: 1. Peel and chop the potato into cubes place in cold water and boil until potatos are completely cooked through. . 2. Mash the potatos and set aside . 3. Make the pie shell by mixing flour, butter and ice water in a mixer until it forms a ball. . 4. Wrap in cling film and rest in the fridge for 10 mins. . 5. In a bowl, place butter and sugar and mix until smooth and fluffy, then add the eggs, cinnamon, vanilla and blend until there are no more lumps. . 6. Add the mashed sweet potato and pour onto pie crust and bake for 30-45 mins. Garnish with whipped cream 🤗
