Secret Thai Recipes from a Thai Chef
Every time I eat a delicious meal, I find myself wondering what was so special about it? Was it the ingredients, the spices or the chef’s magic hands?
Entering the kitchen of Lan Tania at Fairmont Heliopolis & Towers revealed the answers to my question. And as the amazing Chef Mel passed on the secrets to me, I’d like to do the same with you guys.
Here are the secret recipes of two of the most extraordinary dishes you’ll ever taste, special thanks to Executive Chef Pitchaphat Duangkhum (or “Mel” for short).
Chicken and Coconut Soup
Ingredients:
Now all you need is to follow these instructions and you’ll prepare the most delicious Thai soup you’ve ever tasted:
Method:
1. Heat up the Wok or pot, place the water and bring to the boil.
2. Add the lemongrass, kaffir lime leaves, galangal, mushrooms and chicken.
3. Simmer until the Chicken is half cooked, then add the coconut milk and continue to simmer until the chicken is fully cooked.
4.Add the cherry tomatoes.
3. Finish by adding the fish sauce, lime juice and sugar.
4. Serve in soup bowls, garnished with coriander and chili oil (optional)
For the main course, get ready to cook a sensational Thai Shrimp Curry the perfect way.
Thai Shrimp Curry
Ingredients:
Method:
1. Place the oil in the wok or pot, add the curry paste and sauté until fragrant.
2. Add the coconut milk and bring to the boil.
3. Add the eggplant and simmer until cooked.
4. Add the shrimps, fish sauce and sugar.
5. Add the final touches by adding the kaffir lime leaves, red chili, basil leaves.
6. Serve in a bowl with steamed rice.
